Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking.
- Make Cookie Dough: In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. Beat in the egg and vanilla extract until combined. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft cookie dough forms. Set the dough aside.
- Prepare Mochi Dough: In a microwave-safe bowl, whisk together mochiko, whole milk, and sweetened condensed milk until smooth. Microwave on high for 2 to 3 minutes, stirring every 30 seconds, until the mixture forms a sticky, chewy dough. Let it cool slightly before handling.
- Assemble Cookies: Dust your hands with cornstarch to prevent sticking. Scoop about 1 tablespoon of the cookie dough and flatten it slightly. Place a small amount of mochi dough in the center, adding optional fillings such as chocolate chips, Nutella, or red bean paste inside the mochi if desired. Wrap the cookie dough around the mochi and filling, sealing it completely. Place each assembled cookie on the prepared baking sheet and repeat with the remaining dough.
- Bake Cookies: Bake the cookies for 10 to 12 minutes, or until the edges turn lightly golden. Remove from the oven and let them cool on the baking sheet for a few minutes before serving.
