Description

These Easy Garlic Butter Beef Cheeseburger Rollups combine flavorful seasoned ground beef, melted cheddar and mozzarella cheeses, and a delicious garlic butter coating wrapped in soft flour tortillas. Baked until golden and bubbly, they make a perfect savory appetizer or main dish for a quick and satisfying meal.

Ingredients

Scale

For the Beef Filling

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste

For the Rollups

  • 4 large flour tortillas
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

For the Garlic Butter

  • 1/4 cup butter, melted
  • 3 cloves garlic, minced

Garnish

  • Sliced pickles, for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking and ensure even baking.
  2. Cook the Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef, breaking it up with a spatula, and cook until browned and fully cooked, about 7–8 minutes. Drain excess fat if needed.
  3. Season the Beef: Stir in Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and black pepper into the cooked beef. Mix well and remove from heat. Let it cool slightly to avoid melting tortillas during assembly.
  4. Prepare the Garlic Butter: In a small bowl, combine melted butter with minced garlic until thoroughly mixed. Set aside for brushing onto the rollups later.
  5. Assemble the Rollups: Lay out the four flour tortillas on a clean surface. Evenly distribute the cooled beef mixture over each tortilla. Sprinkle shredded cheddar and mozzarella cheeses on top of the beef filling.
  6. Roll and Bake: Roll each tortilla tightly from one side, tucking in the edges to seal the filling inside. Place the rollups seam-side down on the prepared baking sheet. Brush each rollup generously with the garlic butter mixture. Bake in the oven for 12–15 minutes until golden brown and the cheese is melted and bubbly.
  7. Serve: Allow the rollups to cool slightly before serving. Slice into pinwheels if desired and garnish with sliced pickles for the perfect cheeseburger flavor. Serve warm and enjoy!

Notes

  • Allow the beef mixture to cool before spreading on tortillas to prevent them from becoming soggy or tearing.
  • You can substitute flour tortillas with whole wheat or gluten-free versions if preferred.
  • For extra heat, add a pinch of red pepper flakes to the beef seasoning.
  • These rollups can be made ahead and refrigerated; reheat in the oven before serving.
  • Try adding a drizzle of ketchup or mustard inside the rollups for more authentic cheeseburger taste.
