Ingredients
Scale
Filling
- 2 cups cooked chicken, shredded (rotisserie chicken works great)
- 1/2 cup buffalo sauce (store-bought or homemade)
- 1/4 cup ranch dressing or blue cheese dressing (depending on preference)
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded carrots (optional for crunch)
Other
- 10-12 egg roll wrappers
- Olive oil spray or cooking spray
Instructions
- Prepare the Filling: In a large bowl, combine the shredded chicken, buffalo sauce, ranch or blue cheese dressing, and mozzarella cheese. Add the shredded carrots if using. Mix well until everything is evenly coated.
- Assemble the Egg Rolls: Lay an egg roll wrapper on a flat surface, oriented with a corner facing you like a diamond shape.
- Add Filling: Place 2-3 tablespoons of the buffalo chicken mixture in the center of the wrapper.
- Roll the Egg Rolls: Fold the sides of the wrapper over the filling, then roll the egg roll tightly from the bottom corner upwards. Wet the top corner with a little water to seal the wrapper securely.
- Repeat: Continue assembling the remaining egg rolls using the remaining wrappers and filling.
- Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for approximately 3 minutes to ensure even cooking.
- Prepare Basket: Lightly spray the air fryer basket with olive oil spray to prevent sticking.
- Arrange Egg Rolls: Place the egg rolls in a single layer in the air fryer basket, ensuring they aren’t touching, and lightly spray the tops with olive oil spray for extra crispiness.
- Air Fry: Cook the egg rolls at 375°F (190°C) for 8-10 minutes, flipping them halfway through the cooking time so they brown evenly and become crispy.
- Serve: Remove the egg rolls from the air fryer once golden and crispy. Serve immediately with additional buffalo sauce, ranch dressing, or blue cheese dressing for dipping.
Notes
- For extra crunch, add shredded carrots to the filling.
- Ensure the air fryer basket is not overcrowded to allow even air circulation and crisping.
- Use a light coating of olive oil spray to achieve a crispy texture without deep frying.
- Customize the dipping sauces according to your taste preference: ranch or blue cheese complement the spicy buffalo flavor well.
- These egg rolls can be prepared ahead of time and refrigerated before air frying. Just add a minute or two to the cooking time if cooking straight from the fridge.
